Choose from decadent chocolate, vanilla sponge, carrot or fruit cake with a variety of fillings, special dietary requirements can also be catered for. Her passion for cake decoration has led Erica to win gold and silver awards at prestigious competitions around the country. Her cake designs have been published in Wedding Cakes: a Design Source Magazine and she also writes regular articles for Cakes and Sugarcraft magazine and is an accredited demonstrator for the British Sugarcraft Guild, running classes, demonstrations and workshops in cake decoration. Types & Flavours of Wedding Cake You can chose from traditional rich fruit cake, Madeira sponge cake, moist chocolate cake or carrot. If having more than one tier, you may choose to have a combination of the above. Sponge cakes may be filled with jam and vanilla buttercream, dark, milk or white chocolate buttercream, or lemon buttercream (other flavoured buttercreams on request). They are then covered with soft sugarpaste icing. Rich fruit cakes are covered with a layer of marzipan, and then coated with soft sugarpaste icing, or traditional royal icing..
